- 2 lbs russet potatoes, peeled and diced
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 packet ranch seasoning mix
- 1 block (8 oz) cream cheese, softened
- 1 cup heavy cream or half-and-half
- 2 cups shredded cheddar cheese
- 1 cup cooked bacon, crumbled
- Salt and pepper to taste
- Optional garnish: green onions, extra cheese, sour cream

- Add potatoes, onion, garlic, chicken broth, and ranch seasoning to the crock pot.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until potatoes are tender.
- Use a potato masher or immersion blender to partially blend the soup.
- Stir in cream cheese until melted and smooth.
- Add heavy cream, cheddar cheese, and bacon. Stir well.
- Cook an additional 15–20 minutes until thick and creamy.
- Taste and adjust salt and pepper.
- Serve hot with desired toppings.
Notes
For extra thickness, blend more of the soup. You can substitute turkey bacon or add diced ham for variation. Leftovers reheat beautifully.
