Description

Ingredients

  • 67 medium russet potatoes, peeled and diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup milk
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 6 slices cooked bacon, crumbled
  • 2 tbsp unsalted butter
  • 1 tsp salt (to taste)
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika
  • 23 green onions, chopped (for garnish)

Instructions

  1. Place potatoes, onion, garlic, butter, salt, pepper, and smoked paprika in the slow cooker.
  2. Pour in chicken broth and stir to combine. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until potatoes are tender.
  3. Use a potato masher or immersion blender to mash some of the potatoes, leaving a slightly chunky texture.
  4. Stir in milk, heavy cream, cheddar cheese, and crumbled bacon. Cook an additional 15–20 minutes until cheese is melted and soup is creamy.
  5. Serve hot, garnished with green onions and extra bacon if desired.

Notes

For a lighter version, replace heavy cream with half-and-half and use reduced-fat cheese. You can also add a pinch of cayenne pepper for a subtle kick.
