This Crock Pot Crack Potato Soup is ultra-creamy, cheesy, and downright addictive. Packed with potatoes, bacon, cheese, and a rich broth, it’s a comforting slow cooker soup that everyone will love.

- 6–7 medium russet potatoes, peeled and diced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup milk
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- 6 slices cooked bacon, crumbled
- 2 tbsp unsalted butter
- 1 tsp salt (to taste)
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika
- 2–3 green onions, chopped (for garnish)
Instructions
- Place potatoes, onion, garlic, butter, salt, pepper, and smoked paprika in the slow cooker.
- Pour in chicken broth and stir to combine. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until potatoes are tender.
- Use a potato masher or immersion blender to mash some of the potatoes, leaving a slightly chunky texture.
- Stir in milk, heavy cream, cheddar cheese, and crumbled bacon. Cook an additional 15–20 minutes until cheese is melted and soup is creamy.
- Serve hot, garnished with green onions and extra bacon if desired.
Notes
For a lighter version, replace heavy cream with half-and-half and use reduced-fat cheese. You can also add a pinch of cayenne pepper for a subtle kick.
