Description
These Crispy Zucchini Fritters are golden on the outside, tender on the inside, and bursting with fresh flavor. A delicious way to use up summer zucchini, they’re perfect as a snack, side dish, or light vegetarian meal.

- 2 medium zucchini, grated
- 1/2 tsp salt (for draining)
- 1/4 cup finely chopped green onions
- 1/4 cup grated Parmesan cheese
- 1/4 cup all-purpose flour (or almond flour for gluten-free)
- 1 large egg
- 2 cloves garlic, minced
- 1/2 tsp black pepper
- 1/4 tsp salt
- 1/4 tsp baking powder
- Olive oil or avocado oil, for frying
- Greek yogurt or sour cream, for serving (optional)
Instructions
- Prep zucchini: Grate zucchini and place in a colander. Sprinkle with 1/2 tsp salt and let sit for 10–15 minutes. Squeeze out as much liquid as possible using a clean towel.
- Mix batter: In a large bowl, combine drained zucchini, green onions, Parmesan, flour, egg, garlic, pepper, remaining salt, and baking powder. Mix until just combined.
- Heat oil: Heat a thin layer of oil in a skillet over medium heat until shimmering.
- Fry fritters: Scoop about 2 tablespoons of batter per fritter into the pan, flattening gently. Cook 2–3 minutes per side until golden and crispy. Drain on paper towels.
- Serve: Serve warm with a dollop of Greek yogurt or sour cream if desired. Garnish with extra herbs or lemon zest.
Notes
To keep fritters crispy, place them on a wire rack after frying instead of stacking. These also reheat well in the oven or air fryer. Add fresh herbs or a sprinkle of feta for extra flavor!
