  • 1 small green cabbage, finely shredded
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 23 tbsp olive oil or vegetable oil for frying
  • Optional: fresh parsley or chives for garnish
  • Optional: sour cream or Irish cream sauce for dipping

  1. Place shredded cabbage in a large bowl. Sprinkle with a little salt and let sit 5–10 minutes. Then squeeze out excess moisture.
  2. In a separate bowl, whisk together eggs, flour, Parmesan, garlic, salt, and pepper until smooth.
  3. Add the cabbage to the egg mixture and stir to combine thoroughly.
  4. Heat oil in a large skillet over medium heat.
  5. Scoop 2–3 tbsp of the mixture per fritter into the skillet, flatten slightly with a spatula.
  6. Cook 3–4 minutes per side until golden brown and crispy. Remove and drain on paper towels.
  7. Garnish with fresh parsley or chives, and serve with sour cream or Irish cream sauce if desired.

Notes

For extra crispiness, allow fritters to rest 5 minutes before serving. You can also bake them at 400°F (200°C) for 15–20 minutes for a lighter version.
