- 1 small green cabbage, finely shredded
- 2 large eggs
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2–3 tbsp olive oil or vegetable oil for frying
- Optional: fresh parsley or chives for garnish
- Optional: sour cream or Irish cream sauce for dipping

- Place shredded cabbage in a large bowl. Sprinkle with a little salt and let sit 5–10 minutes. Then squeeze out excess moisture.
- In a separate bowl, whisk together eggs, flour, Parmesan, garlic, salt, and pepper until smooth.
- Add the cabbage to the egg mixture and stir to combine thoroughly.
- Heat oil in a large skillet over medium heat.
- Scoop 2–3 tbsp of the mixture per fritter into the skillet, flatten slightly with a spatula.
- Cook 3–4 minutes per side until golden brown and crispy. Remove and drain on paper towels.
- Garnish with fresh parsley or chives, and serve with sour cream or Irish cream sauce if desired.
Notes
For extra crispiness, allow fritters to rest 5 minutes before serving. You can also bake them at 400°F (200°C) for 15–20 minutes for a lighter version.
