- 4 salmon fillets (6 oz each)
- 1/2 cup grated Parmesan cheese
- 1/4 cup panko breadcrumbs
- 2 tablespoons olive oil
- 1 tablespoon Dijon mustard
- 2 garlic cloves, minced
- 1/2 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat and Prep: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease.
- Make the Crust: In a bowl, mix Parmesan, panko, olive oil, garlic, and Italian seasoning until crumbly.
- Season and Brush: Season salmon with salt and pepper. Brush tops with Dijon mustard for extra flavor and to help the crust stick.
- Top and Bake: Press the crust mixture evenly on top of each fillet. Bake for 12–15 minutes, or until salmon is flaky and crust is golden.
- Garnish and Serve: Sprinkle with fresh parsley and serve immediately.
Notes
Use freshly grated Parmesan for best results. Add a little lemon zest to the crust for a bright finish. Serve with roasted vegetables, rice, or a crisp salad.
