These Crispy Loaded Hasselback Potato Bites are golden, crispy on the outside, soft on the inside, and loaded with cheese, bacon, and green onions. Perfect as a party appetizer or snack!

- 12 small baby potatoes
- 3 tbsp olive oil or melted butter
- Salt and black pepper, to taste
- 1 cup shredded cheddar cheese
- 4 slices cooked bacon, crumbled
- 2 green onions, sliced
- Sour cream, for serving
Instructions
- Preheat oven: Heat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Prepare potatoes: Slice each potato thinly, stopping just before cutting all the way through so slices stay attached.
- Season and roast: Brush potatoes with olive oil or butter, sprinkle with salt and pepper. Roast for 35–40 minutes until tender and crispy.
- Add toppings: Sprinkle cheddar cheese and crumbled bacon over each potato. Return to oven for 5–7 minutes until cheese melts.
- Garnish: Top with green onions and serve with sour cream.
Notes
Use small, evenly sized potatoes for best results. For extra crispiness, drizzle a little more oil between the slices before baking.
