This Crispy Homemade Baked Chicken is golden, juicy, and full of flavor. With a seasoned breadcrumb coating and oven-baked to perfection, it’s a healthier alternative to fried chicken without sacrificing any crunch or taste.

- 4–6 bone-in, skin-on chicken thighs or drumsticks
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 2 large eggs
- 2 tablespoons milk
- 1 1/2 cups breadcrumbs (panko preferred)
- 2 tablespoons grated Parmesan cheese (optional)
- Cooking spray or a few tablespoons olive oil
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or foil and place a wire rack on top.
- In a shallow bowl, combine flour, salt, pepper, paprika, garlic powder, and onion powder.
- In another bowl, whisk together eggs and milk.
- In a third bowl, combine breadcrumbs and Parmesan cheese (if using).
- Dredge each chicken piece first in the flour mixture, then dip in the egg mixture, and finally coat with the breadcrumb mixture. Press gently to adhere.
- Place coated chicken on the prepared wire rack. Spray lightly with cooking spray or drizzle with olive oil.
- Bake for 35–45 minutes, or until the chicken is golden brown, crispy, and reaches an internal temperature of 165°F (74°C).
- Let rest for 5 minutes before serving.
Notes
For extra crispiness, let the chicken sit for 10 minutes after breading before baking. You can also experiment with different seasonings in the breadcrumb mixture, like smoked paprika or dried herbs. Leftovers reheat well in a 375°F oven for 10–15 minutes.
