- 1 lb boneless, skinless chicken breasts or thighs
- 1 cup dill pickles, finely chopped or crushed
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs (panko or regular)
- 2 eggs, beaten
- 1 tsp garlic powder
- Salt and pepper, to taste
- 2–3 tbsp olive oil or melted butter for frying
- Optional garnish: fresh parsley or dill

- Pound chicken breasts to even thickness if needed.
- In a shallow bowl, mix crushed dill pickles, Parmesan, breadcrumbs, garlic powder, salt, and pepper.
- In another bowl, beat the eggs.
- Dip each chicken piece in egg, then coat with the pickle-Parmesan mixture, pressing gently to adhere.
- Heat olive oil or butter in a skillet over medium heat.
- Cook chicken 4–5 minutes per side until golden brown and cooked through (165°F / 74°C).
- Remove from skillet and let rest for 2 minutes. Garnish with fresh parsley or dill if desired.
Notes
For extra crispiness, bake coated chicken at 400°F (200°C) for 10 minutes after pan-frying. Serve with mashed potatoes, salad, or roasted veggies. You can also try spicy pickle brine for a kick!
