  • 1 lb boneless, skinless chicken breasts or thighs
  • 1 cup dill pickles, finely chopped or crushed
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs (panko or regular)
  • 2 eggs, beaten
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • 23 tbsp olive oil or melted butter for frying
  • Optional garnish: fresh parsley or dill

  1. Pound chicken breasts to even thickness if needed.
  2. In a shallow bowl, mix crushed dill pickles, Parmesan, breadcrumbs, garlic powder, salt, and pepper.
  3. In another bowl, beat the eggs.
  4. Dip each chicken piece in egg, then coat with the pickle-Parmesan mixture, pressing gently to adhere.
  5. Heat olive oil or butter in a skillet over medium heat.
  6. Cook chicken 4–5 minutes per side until golden brown and cooked through (165°F / 74°C).
  7. Remove from skillet and let rest for 2 minutes. Garnish with fresh parsley or dill if desired.

Notes

For extra crispiness, bake coated chicken at 400°F (200°C) for 10 minutes after pan-frying. Serve with mashed potatoes, salad, or roasted veggies. You can also try spicy pickle brine for a kick!
