  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1/2 cup sour cream or cream cheese
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • 1/2 cup shredded cheddar or Swiss cheese
  • 1/2 cup breadcrumbs (optional, for topping)

  1. Preheat oven: Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. Sauté aromatics: In a large skillet, melt butter or heat olive oil over medium heat. Add onion and cook 3–4 minutes until softened. Add garlic and cook 30 seconds.
  3. Cook vegetables: Add chopped winter vegetables and cook 5–7 minutes until slightly tender. Stir in peas and broccoli.
  4. Make sauce: Sprinkle flour over vegetables and stir well. Slowly add milk, stirring constantly until thickened. Remove from heat and stir in sour cream or cream cheese, thyme, salt, and pepper.
  5. Assemble casserole: Transfer creamy vegetables to the prepared baking dish. Top with shredded cheese and breadcrumbs, if using.
  6. Bake for 20–25 minutes until bubbly and golden on top.
