- 2 cups milk
- 1/2 cup sour cream or cream cheese
- 1 tsp dried thyme

- 1/2 cup shredded cheddar or Swiss cheese
- 1/2 cup breadcrumbs (optional, for topping)

- Preheat oven: Preheat oven to 375°F (190°C) and lightly grease a baking dish.
- Sauté aromatics: In a large skillet, melt butter or heat olive oil over medium heat. Add onion and cook 3–4 minutes until softened. Add garlic and cook 30 seconds.
- Cook vegetables: Add chopped winter vegetables and cook 5–7 minutes until slightly tender. Stir in peas and broccoli.
- Make sauce: Sprinkle flour over vegetables and stir well. Slowly add milk, stirring constantly until thickened. Remove from heat and stir in sour cream or cream cheese, thyme, salt, and pepper.
- Assemble casserole: Transfer creamy vegetables to the prepared baking dish. Top with shredded cheese and breadcrumbs, if using.
- Bake for 20–25 minutes until bubbly and golden on top.
- Serve warm as a main or side dish.
