- 2 carrots, diced
- 2 celery stalks, diced
- 1 cup green beans, chopped
- 1 medium potato, peeled and diced
- 4 cups vegetable broth
- 1/2 cup heavy cream or coconut milk
- Salt and pepper, to taste
- Fresh parsley or thyme for garnish
Instructions
- Sauté aromatics: Heat butter or olive oil in a large pot over medium heat. Add onion and garlic and cook until softened.
- Add vegetables: Stir in carrots, celery, green beans, and potatoes. Cook for 5 minutes, stirring occasionally.
- Add broth and simmer: Pour in vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes until vegetables are tender.
- Blend soup: Use an immersion blender to puree until smooth and creamy or leave some chunks for texture.
