Ingredients

  • 4 cups vegetable broth
  • 1/2 cup heavy cream or coconut milk
  • Salt and pepper, to taste
  • Fresh parsley or thyme for garnish

Instructions

  1. Sauté aromatics: Heat butter or olive oil in a large pot over medium heat. Add onion and garlic and cook until softened.
  2. Add vegetables: Stir in carrots, celery, green beans, and potatoes. Cook for 5 minutes, stirring occasionally.
  3. Add broth and simmer: Pour in vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes until vegetables are tender.
  4. Blend soup: Use an immersion blender to puree until smooth and creamy or leave some chunks for texture.
