  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 zucchini, diced
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 potato, peeled and diced
  • 6 cups vegetable broth
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1/2 tsp paprika
  • 1/2 cup heavy cream or coconut milk
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery. Sauté until softened.
  2. Add zucchini, broccoli, cauliflower, and potato. Stir to combine.
  3. Pour in vegetable broth and season with thyme, parsley, paprika, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 20–25 minutes until vegetables are tender.
  5. Use an immersion blender to partially puree the soup, leaving some chunks for texture.
  6. Stir in cream or coconut milk and simmer for 5 minutes more.
  7. Serve hot, garnished with fresh parsley.

Notes

For a vegan option, use coconut milk or cashew cream instead of heavy cream. Add spinach or kale at the end for extra nutrients.
