- 4 salmon fillets (6 oz each)

- 1 tsp Italian seasoning
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1/3 cup sun-dried tomatoes, sliced
- 2 cups fresh spinach
- Optional: red pepper flakes for heat

- Season salmon: Pat salmon dry and season with salt, pepper, and Italian seasoning.
- Sear salmon: Heat olive oil in a large skillet over medium-high heat. Cook salmon 4–5 minutes per side until golden and cooked through. Remove and set aside.
- Make sauce: In the same skillet, sauté garlic for 30 seconds until fragrant. Add chicken broth and scrape up any browned bits.
- Stir in heavy cream, Parmesan cheese, sun-dried tomatoes, and red pepper flakes if using. Simmer 3–4 minutes until sauce thickens.
- Add spinach and cook until wilted.
- Combine: Return salmon to the skillet and spoon sauce over the fillets. Simmer 1–2 minutes.
- Serve hot with pasta, rice, or crusty bread.
Notes
For a lighter version, substitute half-and-half for the heavy cream. This dish pairs beautifully with fettuccine, mashed potatoes, or roasted vegetables.
