  • 4 salmon fillets (6 oz each)
  • Salt and black pepper, to taste
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup sun-dried tomatoes, sliced
  • 2 cups fresh spinach
  • Optional: red pepper flakes for heat

  1. Season salmon: Pat salmon dry and season with salt, pepper, and Italian seasoning.
  2. Sear salmon: Heat olive oil in a large skillet over medium-high heat. Cook salmon 4–5 minutes per side until golden and cooked through. Remove and set aside.
  3. Make sauce: In the same skillet, sauté garlic for 30 seconds until fragrant. Add chicken broth and scrape up any browned bits.
  4. Stir in heavy cream, Parmesan cheese, sun-dried tomatoes, and red pepper flakes if using. Simmer 3–4 minutes until sauce thickens.
  5. Add spinach and cook until wilted.
  6. Combine: Return salmon to the skillet and spoon sauce over the fillets. Simmer 1–2 minutes.
  7. Serve hot with pasta, rice, or crusty bread.

Notes

For a lighter version, substitute half-and-half for the heavy cream. This dish pairs beautifully with fettuccine, mashed potatoes, or roasted vegetables.
