- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (10 oz) Rotel diced tomatoes with green chilies, undrained
- 1/2 cup heavy cream or half-and-half
- 1 cup shredded cheddar cheese
- 8 oz pasta (rotini, penne, or elbow macaroni)
- Salt and pepper, to taste
- 1 tsp chili powder (optional)
- Fresh parsley, for garnish

- Cook pasta: Cook pasta according to package directions. Drain and set aside.
- Cook beef: In a large skillet, cook ground beef and onion over medium heat until browned. Add garlic and cook 1 minute. Drain excess fat.
- Add Rotel: Stir in the Rotel tomatoes (with juice) and chili powder if using. Simmer 2–3 minutes.
- Make creamy: Lower heat and stir in heavy cream. Add 3/4 cup of the shredded cheese and stir until melted and smooth.
- Combine with pasta: Toss the cooked pasta into the skillet with the creamy beef mixture until well coated.
- Serve: Sprinkle remaining cheese on top and garnish with parsley. Serve warm.

For extra spice, add diced jalapeños or a dash of hot sauce. This recipe can be made ahead and reheated; add a splash of cream when reheating if needed.
