  • Salt and pepper, to taste
  • Fresh basil leaves for garnish

Instructions

  1. Roast garlic: Preheat oven to 400°F (200°C). Slice tops off garlic heads, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.
  2. Sauté onion: In a large pot, heat olive oil over medium heat. Add chopped onion and cook until translucent.
  3. Add tomatoes and broth: Stir in crushed tomatoes, vegetable broth, and dried basil. Bring to a simmer.
  4. Add roasted garlic: Squeeze roasted garlic cloves from skins and add to the pot. Simmer for 10 minutes to blend flavors.
  5. Blend soup: Use an immersion blender to puree soup until smooth and creamy.
  6. Add cream and season: Stir in heavy cream or coconut milk. Heat through gently and season with salt and pepper.
