This Creamy Roasted Cauliflower Soup is velvety smooth, full of rich roasted flavor, and incredibly comforting. It’s simple, healthy, and perfect as a cozy starter or a light main dish.

- 1 large head cauliflower, cut into florets
- 2 tbsp olive oil
- 1 medium onion, diced
- 2 garlic cloves, minced
- 4 cups vegetable broth
- 1 cup heavy cream (or coconut milk for dairy-free)
- 1/2 tsp smoked paprika
- Salt and black pepper, to taste
- Fresh thyme or parsley, for garnish
Instructions
- Preheat oven to 400°F (200°C). Toss cauliflower florets with 1 tbsp olive oil, salt, and pepper. Roast on a baking sheet for 25–30 minutes, until golden and tender.
- In a large pot, heat remaining olive oil. Sauté onion and garlic until fragrant and softened.
- Add roasted cauliflower and vegetable broth. Bring to a simmer for 10 minutes.
- Blend the soup with an immersion blender until creamy and smooth.
- Stir in heavy cream (or coconut milk) and smoked paprika. Adjust seasoning with salt and pepper.
- Serve hot, garnished with thyme or parsley.
Notes
For extra depth of flavor, roast the cauliflower until slightly caramelized. Make it vegan by replacing cream with coconut milk or almond milk.
