- 2 lbs boneless, skinless chicken breasts
- 1 (1 oz) packet ranch seasoning mix
- 1 (10.5 oz) can cream of chicken soup
- 8 oz cream cheese, cubed and softened
- 1/2 cup chicken broth
- 1 cup shredded cheddar cheese (optional)
- 1/4 tsp black pepper
- Chopped parsley or green onions (for garnish)
- Cooked pasta, rice, or mashed potatoes (for serving)
Instructions
- Assemble ingredients: Place chicken breasts in the bottom of the crock pot. Sprinkle with ranch seasoning and black pepper.
- Mix sauce: In a bowl, stir together cream of chicken soup, cream cheese, and chicken broth until mostly smooth. Pour over the chicken.
- Cook: Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is tender and cooked through.
- Shred and stir: Shred the chicken in the pot using two forks and stir to mix with the sauce. Add shredded cheddar, if using, and let melt for 10 minutes.
- Serve: Serve warm over your choice of pasta, rice, or mashed potatoes. Garnish with parsley or green onions.
Notes
For extra richness, add a splash of heavy cream at the end. You can also use boneless thighs for juicier results. Great for meal prep and reheats beautifully!
