- 6 large russet potatoes, peeled and diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream or half-and-half
- 4 slices bacon, cooked and crumbled (optional)
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup sour cream
- Salt and black pepper, to taste
- 2 tablespoons butter
- 2 tablespoons chopped fresh chives, for garnish
Instructions
- Melt butter in a large pot over medium heat. Sauté onions and garlic until softened and fragrant.
- Add diced potatoes and broth. Bring to a boil, then reduce heat and simmer 15–20 minutes until potatoes are tender.
- Use an immersion blender to partially blend the soup for a creamy texture while keeping some chunks.
- Stir in heavy cream, cheddar cheese, and sour cream. Heat until cheese is melted and soup is creamy.
- Season with salt and black pepper to taste.
- Serve hot, garnished with crumbled bacon and chopped chives.
Notes
