Ingredients

  • 500 g (1 lb) mushrooms, sliced (button, cremini, or mixed)
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream (or half-and-half for lighter option)
  • 2 tbsp flour (for thickening)
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat butter and olive oil over medium heat. Add onions and sauté until softened, about 5 minutes.
  2. Add garlic, thyme, and mushrooms. Cook until mushrooms release their juices and turn golden, about 8–10 minutes.
  3. Sprinkle flour over the mixture and stir well to coat the mushrooms.
  4. Gradually pour in the broth while stirring. Bring to a simmer and cook for 10 minutes.
  5. Reduce the heat and stir in the heavy cream. Simmer gently for another 5 minutes until the soup thickens slightly.
  6. Season with salt and pepper. Garnish with parsley and serve hot with crusty bread.

Notes

For an extra smooth texture, blend the soup before adding the cream. You can also add a splash of white wine when cooking the mushrooms for more depth of flavor.
