Description

- 500 g (1 lb) mushrooms, sliced (cremini, button, or mixed)
- 2 tbsp butter
- 1 tbsp olive oil
- 1 medium onion, diced
- 4 cloves garlic, minced
- 1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)
- 3 tbsp all-purpose flour
- 4 cups vegetable or chicken broth
- 1 cup heavy cream
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat butter and olive oil in a large pot over medium heat. Add onion and cook until soft, about 5 minutes.
- Add garlic, thyme, and mushrooms. Cook until mushrooms release their juices and turn golden brown, about 8–10 minutes.
- Stir in flour and cook for 1–2 minutes to remove raw taste.
- Gradually add broth while stirring to avoid lumps. Bring to a simmer and cook for 10 minutes.
- Reduce heat, stir in cream, and season with salt and pepper. Simmer for 5 minutes until thickened and creamy.
- Garnish with fresh parsley and serve hot with crusty bread.
Notes
For an extra-rich flavor, blend half the soup until smooth, then combine with the remaining chunky mixture. You can also substitute coconut milk for a dairy-free version.
