  • 4 cloves garlic, minced
  • 1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)
  • 3 tbsp all-purpose flour
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat butter and olive oil in a large pot over medium heat. Add onion and cook until soft, about 5 minutes.
  2. Add garlic, thyme, and mushrooms. Cook until mushrooms release their juices and turn golden brown, about 8–10 minutes.
  3. Stir in flour and cook for 1–2 minutes to remove raw taste.
  4. Gradually add broth while stirring to avoid lumps. Bring to a simmer and cook for 10 minutes.
  5. Reduce heat, stir in cream, and season with salt and pepper. Simmer for 5 minutes until thickened and creamy.
  6. Garnish with fresh parsley and serve hot with crusty bread.

Notes
