- 2 tbsp olive oil or butter
- 1 medium onion, diced
- 3 cloves garlic, minced
- 500 g (1 lb) mushrooms (cremini, button, or mixed), sliced
- 6 cups vegetable or chicken broth
- 1 tsp dried thyme
- 1 bay leaf
- 200 g (7 oz) small pasta (ditalini, shells, or elbow)
- 1 cup heavy cream or half-and-half
- 1/2 cup grated Parmesan cheese
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil or butter in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
- Stir in garlic and mushrooms. Cook until mushrooms release liquid and begin to brown, about 8 minutes.
- Add broth, thyme, and bay leaf. Bring to a boil, then reduce heat and simmer for 10 minutes.
- Stir in pasta and cook until al dente, about 8–10 minutes.
- Remove bay leaf. Stir in cream and Parmesan cheese, mixing until smooth and creamy.
- Season with salt and pepper, garnish with fresh parsley, and serve warm.
Notes
For extra richness, add a splash of white wine when cooking the mushrooms. You can also use whole wheat pasta for a healthier option.
