- 2 boneless, skinless chicken breasts
- 1/2 cup flour
- 1 egg, beaten
- 1 cup panko breadcrumbs
- Oil for frying
- 2 servings ramen noodles (fresh or instant, discard seasoning)
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 2 tablespoons white miso paste
- 1 tablespoon soy sauce
- 2 cups chicken broth
- 1/2 cup milk or cream (or plant-based alternative)
- 1 soft boiled egg, green onions, nori, sesame seeds for garnish
Instructions
- Prepare Chicken Katsu: Pound chicken breasts to even thickness. Dredge in flour, dip in beaten egg, then coat in panko. Fry in oil over medium heat until golden and crispy. Slice and set aside.
- Make Broth: In a pot, heat sesame oil. Add garlic and ginger, sauté 1 minute. Stir in miso paste and soy sauce. Add broth and milk, simmer 5–7 minutes until creamy.
- Cook Noodles: Cook ramen noodles according to package instructions. Drain and divide into bowls.
- Assemble: Ladle broth over noodles. Top with sliced chicken katsu, soft boiled egg, green onions, nori, and sesame seeds.
- Serve: Enjoy immediately while hot and crispy!
Notes
For extra richness, use cream instead of milk. To make it lighter, air fry or oven-bake the katsu. Add bok choy or mushrooms to boost veggies.
