- 6 medium russet potatoes, peeled and diced
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 6 slices bacon, cooked and crumbled (plus extra for garnish)
- 4 cups chicken broth
- 2 cups whole milk
- 1 cup heavy cream
- 2 cups sharp cheddar cheese, shredded
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 1 teaspoon smoked paprika
- Salt and black pepper, to taste
- Green onions, sliced (for garnish)
- Sour cream (for garnish)
Instructions
- In a large pot, cook bacon until crisp. Remove and set aside, leaving about 1 tablespoon of drippings in the pot.
- Add butter, onion, and garlic. Cook until softened and fragrant.
- Stir in flour to form a roux, whisking for 1–2 minutes.
- Gradually whisk in chicken broth and milk until smooth.
- Add potatoes and smoked paprika. Simmer until potatoes are tender, about 15–20 minutes.
- Stir in heavy cream, cheddar cheese, and cooked bacon. Mix until creamy and smooth.
- Season with salt and pepper to taste. Garnish with sour cream, green onions, extra cheese, and crispy bacon before serving.
Notes
For extra creaminess, blend part of the soup before stirring in the cheese and bacon. You can also swap cheddar for a cheese blend like Colby Jack or Monterey Jack.
