- 1 lb Italian sausage (mild or spicy), casings removed
- 1 tbsp olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 tsp Italian seasoning
- 1/2 tsp red pepper flakes (optional)
- Salt and black pepper, to taste
- 1 package (16 oz) potato gnocchi
- 2 cups fresh spinach, chopped
- 1/2 cup grated Parmesan cheese

- Heat olive oil in a large pot over medium heat. Brown the Italian sausage, breaking it into crumbles. Drain excess grease if needed.
- Add onion, garlic, carrots, and celery. Sauté 5–6 minutes until vegetables are softened.
- Pour in chicken broth and add Italian seasoning and red pepper flakes if using. Bring to a gentle boil.
- Stir in gnocchi and cook 3–4 minutes until tender.
- Reduce heat to low and stir in heavy cream and Parmesan cheese.
- Add spinach and cook 1–2 minutes until wilted.
- Season with salt and black pepper to taste. Serve hot.
Notes
For a thicker soup, mash a few gnocchi against the side of the pot. Kale can be used instead of spinach for a heartier texture.
