  • 1 lb Italian sausage (mild or spicy), casings removed
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 1 package (16 oz) potato gnocchi
  • 2 cups fresh spinach, chopped
  • 1/2 cup grated Parmesan cheese

  1. Heat olive oil in a large pot over medium heat. Brown the Italian sausage, breaking it into crumbles. Drain excess grease if needed.
  2. Add onion, garlic, carrots, and celery. Sauté 5–6 minutes until vegetables are softened.
  3. Pour in chicken broth and add Italian seasoning and red pepper flakes if using. Bring to a gentle boil.
  4. Stir in gnocchi and cook 3–4 minutes until tender.
  5. Reduce heat to low and stir in heavy cream and Parmesan cheese.
  6. Add spinach and cook 1–2 minutes until wilted.
  7. Season with salt and black pepper to taste. Serve hot.

Notes

For a thicker soup, mash a few gnocchi against the side of the pot. Kale can be used instead of spinach for a heartier texture.
