  • 3 cloves garlic, minced
  • 1 (16 oz) package potato gnocchi
  • 1 cup chicken broth (or vegetable broth)
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt (adjust to taste)
  • 3 cups fresh spinach
  • 1 cup crumbled feta cheese
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh basil or parsley for garnish

Instructions

  1. Heat olive oil and butter in a large skillet over medium heat.
  2. Add garlic and sauté for 1 minute until fragrant.
  3. Stir in the gnocchi and toast for 2–3 minutes.
  4. Pour in the chicken broth and heavy cream. Add Italian seasoning, salt, and pepper.
  5. Bring to a simmer, then reduce heat and cook for 5–7 minutes until the gnocchi becomes tender and the sauce thickens.
  6. Stir in the fresh spinach and cook until wilted, about 1–2 minutes.
  7. Add feta cheese and stir until incorporated. Mix in Parmesan if using.
  8. Remove from heat and let rest for 2 minutes to allow sauce to thicken further.
  9. Garnish with basil or parsley and serve warm.

Notes

For extra richness, add a splash of white wine before adding the broth. Swap spinach for kale if desired. Use crumbled goat cheese instead of feta for a creamier finish. Serve with grilled chicken, roasted vegetables, or crusty bread for a complete meal.
