- 2–3 large boneless and skinless chicken breasts, halved horizontally
- 4 tablespoons flour
- 4 tablespoons finely grated fresh Parmesan cheese
- 2 teaspoons salt
- 1 teaspoon garlic powder
- 1/2 teaspoon black cracked pepper
- 5 tablespoons olive oil
- 2 tablespoons butter
- 1 small onion, finely chopped
- 1 whole head of garlic, peeled and divided into 10–12 cloves
- 1 1/4 cup chicken broth
- 1 1/4 cup half and half or heavy cream
- 1/2 cup finely grated fresh Parmesan cheese
- 2 tablespoons fresh parsley, for garnish
Instructions
- Season the chicken with salt, garlic powder, and pepper.
- Combine flour and Parmesan cheese in a shallow bowl. Dredge the chicken in this mixture.
- In a skillet, heat oil and butter over medium-high heat. Fry the chicken until golden on each side. Transfer to a plate.
- In the same skillet, sauté the onion until softened. Add garlic cloves and cook until fragrant.
- Add chicken broth to deglaze the pan, scraping up any browned bits.
- Reduce heat and pour in the cream. Simmer gently, mixing in the Parmesan cheese.
- Return the chicken to the skillet and simmer for 2-3 minutes.
- Garnish with parsley and serve.
