  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/4 tsp smoked paprika
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 4 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • Salt and black pepper, to taste
  • Optional toppings: tortilla strips, shredded cheese, sour cream, cilantro

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic; sauté 3–4 minutes until softened.
  2. Add chili powder, cumin, and smoked paprika; cook 1 minute until fragrant.
  3. Stir in chicken, black beans, corn, diced tomatoes, and chicken broth. Bring to a boil, then reduce heat and simmer 15 minutes.
  4. Add heavy cream and cook 2–3 minutes until heated through.
  5. Season with salt and black pepper to taste. Serve hot with desired toppings.

Notes

For more heat, add diced jalapeños or a dash of hot sauce. Leftovers taste even better the next day.
