- 1 lb cooked chicken, shredded
- 1 tbsp olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/4 tsp smoked paprika
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 4 cups chicken broth
- 1 cup heavy cream or half-and-half
- Salt and black pepper, to taste
- Optional toppings: tortilla strips, shredded cheese, sour cream, cilantro

- Heat olive oil in a large pot over medium heat. Add onion and garlic; sauté 3–4 minutes until softened.
- Add chili powder, cumin, and smoked paprika; cook 1 minute until fragrant.
- Stir in chicken, black beans, corn, diced tomatoes, and chicken broth. Bring to a boil, then reduce heat and simmer 15 minutes.
- Add heavy cream and cook 2–3 minutes until heated through.
- Season with salt and black pepper to taste. Serve hot with desired toppings.
Notes
For more heat, add diced jalapeños or a dash of hot sauce. Leftovers taste even better the next day.
