  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper, to taste
  • 1/2 cup sour cream or Greek yogurt
  • 1/2 cup shredded cheddar or Mexican blend cheese
  • Fresh cilantro, chopped (for garnish)
  • Crushed tortilla chips (optional, for serving)

  1. Sauté aromatics: Heat olive oil in a large pot over medium heat. Add onion and cook until translucent, about 3–4 minutes. Add garlic and cook 30 seconds until fragrant.
  2. Add shredded chicken, enchilada sauce, chicken broth, black beans, corn, cumin, chili powder, salt, and pepper. Stir to combine.
  3. Bring to a simmer and cook 15–20 minutes to allow flavors to meld.
  4. Reduce heat and stir in sour cream and shredded cheese until creamy and well incorporated.
  5. Taste and adjust seasoning if needed.
  6. Serve hot, garnished with fresh cilantro and optional crushed tortilla chips.

Notes

For extra flavor, use rotisserie chicken. You can also add diced green chiles or a splash of lime juice for a zesty finish. Leftovers store well in the fridge for 3 days.
