- 1 lb cooked chicken, shredded or diced

- 1 tsp dried thyme
- 1/2 tsp dried parsley
- Salt and black pepper, to taste
- 1 cup heavy cream or half-and-half
- Optional: fresh parsley for garnish

- Add onion, carrots, and celery; cook 5–6 minutes until softened.
- Stir in garlic and cook 30 seconds until fragrant.
- Add chicken broth, rice, thyme, parsley, salt, and pepper. Bring to a boil.
- Reduce heat and simmer 18–20 minutes until rice is tender.
- Stir in cooked chicken and cream. Simmer 5 minutes until heated through and creamy.
- Adjust seasoning as needed and serve hot with optional fresh parsley garnish.
Notes
For a thicker soup, simmer a few extra minutes or mash some of the rice slightly. This soup freezes well and is perfect for meal prep.
