- 4 boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tbsp olive oil
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp paprika
- Salt and pepper, to taste
- 2 cups frozen peas or mixed vegetables (optional)
- Chopped parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Season chicken with salt, pepper, paprika, and thyme. Cook until lightly browned, about 5β6 minutes. Remove chicken and set aside.
- In the same skillet, sautΓ© onion and garlic until softened and fragrant.
- Add rice and stir to coat with oil for 1β2 minutes.
- Pour in chicken broth and heavy cream, bring to a simmer. Stir in Parmesan cheese.
- Return chicken to the skillet. Cover and cook for 18β20 minutes, stirring occasionally, until rice is tender and chicken is cooked through.
- If using, stir in frozen peas or vegetables in the last 5 minutes of cooking.
- Garnish with chopped parsley before serving. Serve warm and creamy!
