- 2 tbsp olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 medium potatoes, peeled and diced
- 3 cups vegetable broth
- 1 cup milk or cream
- Salt and pepper, to taste
- Fresh thyme or parsley for garnish
Instructions
- Sauté aromatics: Heat olive oil in a large pot over medium heat. Add onion and garlic; cook until softened.
- Add vegetables: Stir in cauliflower, potatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer until vegetables are tender, about 20 minutes.
- Blend soup: Use an immersion blender to puree the soup until creamy but still slightly chunky. Alternatively, carefully blend in batches.
- Add cream: Stir in milk or cream. Season with salt and pepper to taste. Heat through but do not boil.
