- 12 oz spaghetti or fettuccine
- 6 slices bacon, chopped
- 3 cloves garlic, minced
- 3 large eggs
- 1 cup grated Parmesan cheese
- 1/2 cup heavy cream
- 1/2 tsp black pepper
- Salt to taste

- Cook pasta according to package directions. Reserve 1/2 cup pasta water, then drain.
- In a skillet, cook bacon until crispy. Remove excess grease.
- Add garlic to bacon and sauté 30 seconds.
- In a bowl, whisk eggs, Parmesan, cream, and black pepper.
- Add hot pasta to skillet and toss with bacon.
- Remove skillet from heat and quickly stir in egg mixture.
- Add pasta water as needed until sauce becomes silky and creamy.
- Season with salt and garnish before serving.
Notes
Always remove pan from heat before adding eggs to avoid scrambling. Pancetta may replace bacon for authentic flavor.
