  • 12 oz spaghetti or fettuccine
  • 6 slices bacon, chopped
  • 3 cloves garlic, minced
  • 3 large eggs
  • 1 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • 1/2 tsp black pepper
  • Salt to taste
  • Optional: parsley for garnish

  1. Cook pasta according to package directions. Reserve 1/2 cup pasta water, then drain.
  2. In a skillet, cook bacon until crispy. Remove excess grease.
  3. Add garlic to bacon and sauté 30 seconds.
  4. In a bowl, whisk eggs, Parmesan, cream, and black pepper.
  5. Add hot pasta to skillet and toss with bacon.
  6. Remove skillet from heat and quickly stir in egg mixture.
  7. Add pasta water as needed until sauce becomes silky and creamy.
  8. Season with salt and garnish before serving.

Notes

Always remove pan from heat before adding eggs to avoid scrambling. Pancetta may replace bacon for authentic flavor.
