- 1 lb smoked sausage, sliced
- 12 oz pasta (penne, rigatoni, or rotini)
- 1 small onion, diced
- 1 bell pepper, diced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tbsp Cajun seasoning
- 3 cups chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper, to taste
- Optional: chopped parsley for garnish

- Heat olive oil in a large skillet or pot over medium heat.
- Add sausage slices and cook until lightly browned. Remove and set aside.
- In the same pot, sauté onion and bell pepper until softened, 3–4 minutes.
- Add garlic and Cajun seasoning; cook 1 minute until fragrant.
- Pour in chicken broth and bring to a simmer.
- Add pasta and cook, stirring occasionally, until tender, about 10–12 minutes.
- Return sausage to the pot, stir in heavy cream and Parmesan until creamy.
- Season with salt and pepper to taste.
- Garnish with parsley and serve hot.
Notes
For extra heat, add crushed red pepper flakes. You can also swap sausage for chicken or shrimp if preferred.
