- 2 celery stalks, diced

- 1 tsp Cajun seasoning
- 1/2 tsp salt (adjust to taste)
- 1/4 tsp black pepper
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup diced tomatoes (canned or fresh)
- 1 cup corn kernels (fresh or frozen)
- 1/2 cup shredded cheddar cheese (optional)
- Chopped green onions or parsley, for garnish

- Cook chicken: In a large pot, heat olive oil over medium heat. Add chicken and cook until lightly browned. Remove and set aside.
- Sauté vegetables: Add onion, garlic, bell pepper, and celery to the pot. Cook 4–5 minutes until softened.
- Add seasonings: Stir in smoked paprika, Cajun seasoning, salt, and pepper.
- Add liquids: Pour in chicken broth and bring to a gentle simmer.
- Add chicken & veggies: Return chicken to the pot along with diced tomatoes and corn. Simmer 10–12 minutes until chicken is cooked through.
- Add cream: Stir in heavy cream and cook 2–3 minutes until heated through.
- Serve: Garnish with shredded cheese and fresh herbs. Serve warm.
Notes
For extra heat, add a pinch of cayenne or hot sauce. Serve with crusty bread or over rice for a more filling meal. Soup can be made ahead and reheated gently.
