  • 2 chicken breasts, sliced
  • 12 oz penne or fettuccine pasta
  • 2 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small onion, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Optional: parsley for garnish

  1. Cook pasta according to package directions. Drain and set aside.
  2. Toss chicken with Cajun seasoning.
  3. Heat olive oil in a large skillet over medium heat and cook chicken until golden and cooked through. Remove and set aside.
  4. In the same skillet, sauté peppers, onion, and garlic until softened.
  5. Add chicken broth and heavy cream. Simmer 3–4 minutes.
  6. Stir in Parmesan until sauce thickens.
  7. Return chicken to skillet and toss with sauce.
  8. Add pasta and mix until fully coated.

Notes

Adjust Cajun seasoning to control heat. Add shrimp for a surf-and-turf version.
