- 1 lb potato gnocchi
- 2 tbsp olive oil
- 1 lb Italian sausage, casings removed
- 1 small onion, diced
- 3 cloves garlic, minced
- 2 cups butternut squash, peeled and cubed
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 tsp nutmeg
- Salt and pepper, to taste
- Fresh sage or parsley, chopped (for garnish)
Instructions
- Cook gnocchi: Boil gnocchi according to package instructions. Drain and set aside.
- Prepare squash: In a pot, boil or steam butternut squash until tender, about 10-12 minutes. Drain and blend into a smooth puree.
- Cook sausage: Heat olive oil in a large skillet over medium heat. Add sausage and cook until browned, breaking it up as it cooks. Remove and set aside.
- Sauté aromatics: In the same skillet, add onion and cook until translucent. Add garlic and sauté for 1 minute.
- Make sauce: Stir in butternut squash puree, heavy cream, Parmesan, nutmeg, salt, and pepper. Cook on low heat until sauce is warmed through.
- Combine: Add cooked sausage and gnocchi to the sauce. Toss gently to coat and heat through.
- Serve: Garnish with fresh sage or parsley and extra Parmesan if desired. Serve immediately.
Notes
For a vegetarian version, substitute sausage with sautéed mushrooms or plant-based sausage. You can also roast the butternut squash for extra depth of flavor.
