  • 1/2 cup grated Parmesan cheese
  • 1/4 tsp nutmeg

Instructions

  1. Cook gnocchi: Boil gnocchi according to package instructions. Drain and set aside.
  2. Prepare squash: In a pot, boil or steam butternut squash until tender, about 10-12 minutes. Drain and blend into a smooth puree.
  3. Cook sausage: Heat olive oil in a large skillet over medium heat. Add sausage and cook until browned, breaking it up as it cooks. Remove and set aside.
  4. Sauté aromatics: In the same skillet, add onion and cook until translucent. Add garlic and sauté for 1 minute.
  5. Make sauce: Stir in butternut squash puree, heavy cream, Parmesan, nutmeg, salt, and pepper. Cook on low heat until sauce is warmed through.
