  • 2 cups milk or half-and-half
  • 3 cups broccoli florets, chopped
  • 1 cup shredded carrots
  • 2 cups shredded cheddar cheese
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • Optional: pinch of nutmeg

Notes

For a smoother texture, blend part of the soup before adding cheese. You can also use vegetable broth for a vegetarian version.
