- 1/2 cup unsalted butter, cold and cubed
- 1/4 tsp salt
- 2–3 tbsp cold water
- 1 cup sugar (for filling)
- 2 tbsp all-purpose flour (for filling)

- 2 cups fresh or frozen fruit (apples, berries, or peaches)
- 1 tsp vanilla extract
- 1 tsp lemon juice
- 1 egg, beaten (for egg wash)
- Optional: coarse sugar for sprinkling

- Preheat oven to 375°F (190°C).
- For the crust, combine flour and salt in a bowl. Cut in cold butter until mixture resembles coarse crumbs. Add cold water, 1 tbsp at a time, until dough comes together.
- Roll out dough on a floured surface to fit a 9-inch pie pan. Place dough in pan and trim edges.
- In a bowl, mix fruit, sugar, flour, salt, vanilla extract, and lemon juice for the filling. Pour into pie crust.
- Roll remaining dough into strips or shapes for decorative top crust. Place over filling and brush with beaten egg. Sprinkle with coarse sugar if desired.
- Bake for 45–50 minutes or until crust is golden and filling is bubbly.
- Cool at least 1 hour before slicing and serving.
Notes
For extra flair, create lattice or cut-out shapes for the top crust. The pie can be served warm with ice cream or whipped cream.
