  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 tsp salt
  • 23 tbsp cold water
  • 1 cup sugar (for filling)
  • 2 tbsp all-purpose flour (for filling)
  • 1/4 tsp salt (for filling)
  • 2 cups fresh or frozen fruit (apples, berries, or peaches)
  • 1 tsp vanilla extract
  • 1 tsp lemon juice
  • 1 egg, beaten (for egg wash)
  • Optional: coarse sugar for sprinkling

  1. Preheat oven to 375°F (190°C).
  2. For the crust, combine flour and salt in a bowl. Cut in cold butter until mixture resembles coarse crumbs. Add cold water, 1 tbsp at a time, until dough comes together.
  3. Roll out dough on a floured surface to fit a 9-inch pie pan. Place dough in pan and trim edges.
  4. In a bowl, mix fruit, sugar, flour, salt, vanilla extract, and lemon juice for the filling. Pour into pie crust.
  5. Roll remaining dough into strips or shapes for decorative top crust. Place over filling and brush with beaten egg. Sprinkle with coarse sugar if desired.
  6. Bake for 45–50 minutes or until crust is golden and filling is bubbly.
  7. Cool at least 1 hour before slicing and serving.

Notes

For extra flair, create lattice or cut-out shapes for the top crust. The pie can be served warm with ice cream or whipped cream.
