- 1 cup shredded mozzarella or Swiss cheese
- 1/3 cup dried cranberries
- 2 tbsp cream cheese, softened
- 1 tsp dried thyme or rosemary
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1/2 cup chicken broth
- 1 tbsp honey or maple syrup
- Fresh parsley, for garnish

- Prepare chicken: Preheat oven to 375°F (190°C). Cut a pocket into the side of each chicken breast. Season inside and out with salt and pepper.
- Make filling: In a bowl, mix cheese, dried cranberries, cream cheese, thyme, and garlic.
- Stuff chicken: Spoon filling evenly into each chicken breast. Secure with toothpicks if needed.
- Sear: Heat olive oil in an oven-safe skillet over medium heat. Sear chicken 2–3 minutes per side until golden.
- Bake: Add chicken broth and honey to the skillet. Transfer to oven and bake 18–22 minutes, until chicken is cooked through.
- Serve: Remove toothpicks, spoon pan sauce over chicken, garnish with parsley, and serve warm.
Notes
You can substitute goat cheese or cream cheese for a tangier filling. Serve with roasted vegetables, rice, or mashed potatoes for a complete meal.
