  • 2 tbsp olive oil
  • Salt and black pepper, to taste
  • 1 cup fresh or frozen cranberries
  • 1/2 cup orange juice
  • 1/4 cup honey or maple syrup
  • 2 tbsp brown sugar
  • 1 tsp orange zest
  • 1/2 tsp ground cinnamon
  • Optional garnish: fresh rosemary or thyme sprigs

Instructions

  1. Preheat oven to 375°F (190°C). Rub the turkey breast with olive oil, salt, and pepper.
  2. Place turkey on a roasting pan and roast for 50–60 minutes, or until internal temperature reaches 165°F (74°C).
  3. While turkey roasts, prepare the glaze: In a small saucepan over medium heat, combine cranberries, orange juice, honey (or maple syrup), brown sugar, orange zest, and cinnamon.
  4. Cook for 10–12 minutes, stirring occasionally, until cranberries burst and the mixture thickens slightly.
  5. Brush the glaze over the turkey during the last 10–15 minutes of roasting, reserving some glaze for serving.
  6. Remove turkey from oven and let rest for 10 minutes before slicing.
  7. Serve slices with remaining cranberry-orange glaze and garnish with fresh herbs if desired.

Notes

For extra flavor, marinate the turkey breast in the glaze for a few hours before roasting. Use fresh cranberries for a vibrant tartness.
