- 2 tbsp olive oil
- Salt and black pepper, to taste
- 1 cup fresh or frozen cranberries
- 1/2 cup orange juice
- 1/4 cup honey or maple syrup
- 2 tbsp brown sugar
- 1 tsp orange zest
- 1/2 tsp ground cinnamon
- Optional garnish: fresh rosemary or thyme sprigs
Instructions
- Preheat oven to 375°F (190°C). Rub the turkey breast with olive oil, salt, and pepper.
- Place turkey on a roasting pan and roast for 50–60 minutes, or until internal temperature reaches 165°F (74°C).
- While turkey roasts, prepare the glaze: In a small saucepan over medium heat, combine cranberries, orange juice, honey (or maple syrup), brown sugar, orange zest, and cinnamon.
- Cook for 10–12 minutes, stirring occasionally, until cranberries burst and the mixture thickens slightly.
- Brush the glaze over the turkey during the last 10–15 minutes of roasting, reserving some glaze for serving.
- Remove turkey from oven and let rest for 10 minutes before slicing.
- Serve slices with remaining cranberry-orange glaze and garnish with fresh herbs if desired.
Notes
For extra flavor, marinate the turkey breast in the glaze for a few hours before roasting. Use fresh cranberries for a vibrant tartness.
