- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup granulated sugar
- 1/4 tsp salt
- 1 large egg yolk
- For the cranberry-orange curd:
- 1 cup fresh or frozen cranberries
- 1/2 cup granulated sugar
- 1/4 cup freshly squeezed orange juice
- 2 large eggs
- 2 large egg yolks
- 1/4 cup unsalted butter, cut into cubes
- 1 tsp orange zest
- Optional: powdered sugar for dusting

- Preheat oven to 350°F (175°C). In a bowl, combine flour, sugar, and salt for the crust.
- Cut in cold butter until mixture resembles coarse crumbs. Add egg yolk and mix until dough comes together.
- Press dough into a 9-inch tart pan. Prick bottom with a fork and bake 15–18 minutes until lightly golden. Cool completely.
- For the curd, combine cranberries, sugar, and orange juice in a saucepan over medium heat. Cook until cranberries soften, about 5–7 minutes.
- Puree the cranberry mixture and strain to remove skins.
- In a separate bowl, whisk eggs and egg yolks. Gradually whisk in warm cranberry mixture.
- Return mixture to saucepan over low heat. Cook, stirring constantly, until thickened (about 5–7 minutes). Remove from heat and stir in butter and orange zest.
- Pour curd into cooled tart shell and smooth the top. Chill at least 2 hours until set.
- Optional: dust with powdered sugar before serving.
Notes
For a more vibrant color, use fresh cranberries. The tart can be made a day ahead and stored in the refrigerator.
