  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup granulated sugar
  • 1/4 tsp salt
  • 1 large egg yolk
  • For the cranberry-orange curd:
  • 1 cup fresh or frozen cranberries
  • 1/2 cup granulated sugar
  • 1/4 cup freshly squeezed orange juice
  • 2 large eggs
  • 2 large egg yolks
  • 1/4 cup unsalted butter, cut into cubes
  • 1 tsp orange zest
  • Optional: powdered sugar for dusting

  1. Preheat oven to 350°F (175°C). In a bowl, combine flour, sugar, and salt for the crust.
  2. Cut in cold butter until mixture resembles coarse crumbs. Add egg yolk and mix until dough comes together.
  3. Press dough into a 9-inch tart pan. Prick bottom with a fork and bake 15–18 minutes until lightly golden. Cool completely.
  4. For the curd, combine cranberries, sugar, and orange juice in a saucepan over medium heat. Cook until cranberries soften, about 5–7 minutes.
  5. Puree the cranberry mixture and strain to remove skins.
  6. In a separate bowl, whisk eggs and egg yolks. Gradually whisk in warm cranberry mixture.
  7. Return mixture to saucepan over low heat. Cook, stirring constantly, until thickened (about 5–7 minutes). Remove from heat and stir in butter and orange zest.
  8. Pour curd into cooled tart shell and smooth the top. Chill at least 2 hours until set.
  9. Optional: dust with powdered sugar before serving.

Notes

For a more vibrant color, use fresh cranberries. The tart can be made a day ahead and stored in the refrigerator.
