- 4 cups potatoes, peeled and diced
- 4 cups chicken broth

- 1 cup whole milk
- 1/2 tsp salt (adjust to taste)

- 1/2 tsp smoked paprika
- 1/2 tsp dried thyme
- 1 cup shredded cheddar cheese (optional)
- 2 tbsp all-purpose flour
- 2 tbsp butter
- Chopped parsley or green onions, for garnish

- Brown sausage: In a large pot or Dutch oven over medium heat, cook sausage until browned. Remove and set aside.
- Sauté aromatics: In the same pot, add onion and cook until softened, about 4–5 minutes. Add garlic and cook 30 seconds.
- Make roux: Add butter, then sprinkle in flour. Stir and cook for 1 minute.
- Add broth & potatoes: Gradually pour in chicken broth, stirring constantly. Add potatoes, salt, pepper, smoked paprika, and thyme.
- Bring to a simmer and cook for 15–18 minutes, until potatoes are fork-tender.
- Finish soup: Stir in cooked sausage, milk, and heavy cream. Simmer gently for 5 minutes.
- Stir in shredded cheese if using, until melted and smooth.
- Serve: Taste and adjust seasoning. Ladle into bowls and garnish with parsley or green onions.
Notes
For a lighter version, use half-and-half instead of heavy cream. Add kale or spinach at the end for extra greens. Soup thickens as it sits and reheats beautifully.
