- 1 lb Italian sausage (mild or spicy), casings removed
- 1 tbsp olive oil
- 1 medium onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 3–4 medium potatoes, peeled and diced
- 1 can (14.5 oz) diced tomatoes
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes (optional)
- Salt and black pepper to taste
- 2 tbsp chopped fresh parsley (for garnish)
Instructions
- In a large pot, heat olive oil over medium heat. Add Italian sausage and cook until browned, breaking it into small pieces.
- Add onion, carrots, celery, and garlic. Sauté for 5 minutes until vegetables are softened.
- Stir in chicken broth, diced potatoes, diced tomatoes, thyme, oregano, and red pepper flakes if using. Bring to a boil.
- Reduce heat and simmer for 25–30 minutes, or until potatoes are tender.
- Taste and adjust seasoning with salt and black pepper.
- Serve hot, garnished with fresh parsley.
Notes
You can substitute Italian sausage with turkey sausage for a leaner option. Add kale or spinach in the last 5 minutes of cooking for extra greens.
