- 4 ribeye or sirloin steaks (about 8 oz each)
- Salt and black pepper, to taste
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 3 cloves garlic, minced
- 1 shallot, finely chopped
- 1/2 cup Irish stout beer
- 1/2 cup beef broth
- 1 tsp fresh thyme leaves
- 1 tsp fresh rosemary, chopped
- 1 tsp Dijon mustard
- Fresh parsley, for garnish

- Season the steaks with salt and black pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat.
- Sear steaks for 3–4 minutes per side (for medium-rare) or until desired doneness. Remove steaks and let rest.
- Reduce heat to medium. Add butter, garlic, and shallot; sauté until fragrant, about 1–2 minutes.
- Pour in Irish stout and beef broth, scraping up any browned bits from the pan.
- Add thyme, rosemary, and Dijon mustard; simmer 3–4 minutes until sauce thickens slightly.
- Return steaks to the skillet, spooning sauce over them to coat.
- Garnish with fresh parsley and serve immediately with your favorite sides.
Notes
For extra flavor, marinate steaks in a mixture of Irish stout and herbs for 1–2 hours before cooking. Serve with mashed potatoes or roasted vegetables for a complete cozy meal.
