- 3 lbs beef short ribs
- 2 tbsp olive oil
- 4 large onions, thinly sliced
- 3 cloves garlic, minced
- 2 tbsp all-purpose flour
- 2 cups beef broth
- 1 cup red wine
- 2 tsp fresh thyme or 1 tsp dried thyme
- 2 bay leaves
- Salt and black pepper, to taste
- 2 tbsp butter
- Fresh parsley, for garnish

- Preheat oven: Preheat oven to 325°F (165°C).
- Sear short ribs: Season ribs with salt and pepper. In a large oven-safe pot or Dutch oven, heat olive oil over medium-high heat. Brown ribs on all sides, then remove and set aside.
- Cook onions: Reduce heat to medium, add butter and onions. Cook, stirring occasionally, until caramelized, about 15–20 minutes. Add garlic and cook 1 minute.
- Thicken & deglaze: Sprinkle flour over onions and stir 1–2 minutes. Pour in red wine, scraping up browned bits. Simmer 2–3 minutes.
- Add broth & ribs: Add beef broth, thyme, bay leaves, and return short ribs to the pot. Bring to a simmer.
- Braise: Cover and transfer to the oven. Cook 2–2.5 hours until ribs are tender and meat easily pulls from the bone.
- Serve: Remove bay leaves. Serve stew hot, garnished with fresh parsley. Pairs well with mashed potatoes or crusty bread.
Notes
For extra depth, add a splash of Worcestershire sauce or balsamic vinegar to the broth. Leftovers taste even better the next day.
