Ingredients

  • 1 medium head green cabbage, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 large onion, diced
  • 2 garlic cloves, minced
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups vegetable broth
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • Salt and black pepper, to taste
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic and sauté for 2–3 minutes until fragrant.
  2. Add carrots, celery, bell pepper, zucchini, and cabbage. Cook for 5–7 minutes, stirring occasionally.
  3. Pour in diced tomatoes and vegetable broth. Add thyme, basil, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 25–30 minutes until vegetables are tender.
  5. Serve hot, optionally garnished with fresh herbs.
