- 1.5 lbs beef stew meat, cut into 1-inch cubes
- 2 tbsp vegetable oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 cups water
- 4 medium potatoes, diced
- 3 carrots, sliced
- 2 celery stalks, sliced
- 1 can (14.5 oz) diced tomatoes
- 1 tsp paprika
- 1 tsp dried thyme
- 1/2 tsp black pepper
- 1/2 tsp salt
- Optional: 1 cup frozen corn or green beans

- In a large pot or Dutch oven, heat vegetable oil over medium-high heat. Brown beef stew meat on all sides, then remove and set aside.
- In the same pot, sauté onion and garlic until softened, about 3–4 minutes.
- Add beef back to the pot along with beef broth, water, diced tomatoes, paprika, thyme, salt, and pepper. Bring to a boil.
- Reduce heat, cover, and simmer for 1–1.5 hours until beef is tender.
- Add potatoes, carrots, and celery. Continue to simmer for 20–30 minutes until vegetables are tender.
- If desired, stir in frozen corn or green beans and cook 5 more minutes.
- Adjust seasoning as needed and serve hot.
Notes
For richer flavor, brown the beef in batches to avoid overcrowding the pan. Leftovers taste even better the next day.
