  • 1.5 lbs beef stew meat, cut into 1-inch cubes
  • 2 tbsp vegetable oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups water
  • 4 medium potatoes, diced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • Optional: 1 cup frozen corn or green beans

  1. In a large pot or Dutch oven, heat vegetable oil over medium-high heat. Brown beef stew meat on all sides, then remove and set aside.
  2. In the same pot, sauté onion and garlic until softened, about 3–4 minutes.
  3. Add beef back to the pot along with beef broth, water, diced tomatoes, paprika, thyme, salt, and pepper. Bring to a boil.
  4. Reduce heat, cover, and simmer for 1–1.5 hours until beef is tender.
  5. Add potatoes, carrots, and celery. Continue to simmer for 20–30 minutes until vegetables are tender.
  6. If desired, stir in frozen corn or green beans and cook 5 more minutes.
  7. Adjust seasoning as needed and serve hot.

Notes

For richer flavor, brown the beef in batches to avoid overcrowding the pan. Leftovers taste even better the next day.
