  • 1 lb ground beef
  • 1 tbsp taco seasoning
  • 16 oz Velveeta cheese, cubed
  • 1 cup shredded pepper jack or cheddar cheese
  • 1 can (10 oz) Rotel diced tomatoes & green chilies, undrained
  • 1/2 cup milk (as needed for thinning)
  • 1/4 cup chopped fresh cilantro (optional)
  • Optional: diced jalapeños or hot sauce

  1. In a skillet over medium heat, cook ground beef until browned. Drain excess grease.
  2. Stir in taco seasoning and cook for 1–2 minutes until fragrant.
  3. Reduce heat to low and add Velveeta cheese and Rotel tomatoes to the skillet.
  4. Stir continuously until cheese is fully melted and smooth.
  5. Add shredded cheese and milk as needed to reach desired consistency.
  6. Remove from heat and stir in cilantro if using.
  7. Serve warm with tortilla chips.

Notes

Keep queso warm in a slow cooker or over low heat. For extra smoky flavor, add cooked chorizo or a pinch of smoked paprika.
