- 1 lb ground beef
- 1 tbsp taco seasoning
- 16 oz Velveeta cheese, cubed
- 1 cup shredded pepper jack or cheddar cheese
- 1 can (10 oz) Rotel diced tomatoes & green chilies, undrained
- 1/2 cup milk (as needed for thinning)
- 1/4 cup chopped fresh cilantro (optional)
- Optional: diced jalapeños or hot sauce

- In a skillet over medium heat, cook ground beef until browned. Drain excess grease.
- Stir in taco seasoning and cook for 1–2 minutes until fragrant.
- Reduce heat to low and add Velveeta cheese and Rotel tomatoes to the skillet.
- Stir continuously until cheese is fully melted and smooth.
- Add shredded cheese and milk as needed to reach desired consistency.
- Remove from heat and stir in cilantro if using.
- Serve warm with tortilla chips.
Notes
Keep queso warm in a slow cooker or over low heat. For extra smoky flavor, add cooked chorizo or a pinch of smoked paprika.
