This Cowboy Meatloaf is a hearty, flavorful twist on classic meatloaf, packed with smoky barbecue sauce, crispy bacon, and melted cheese. It’s comfort food with a bold, rustic flair perfect for family dinners.

- 1 ½ lbs ground beef
- 6 slices bacon, cooked and crumbled
- 1 cup shredded cheddar cheese
- 1 cup breadcrumbs
- 2 large eggs
- ½ cup barbecue sauce (plus extra for topping)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- Salt and pepper, to taste
Instructions
- Preheat Oven: Preheat oven to 350°F (175°C). Line a baking dish or sheet with parchment paper or foil.
- Mix Ingredients: In a large bowl, combine ground beef, crumbled bacon, shredded cheddar, breadcrumbs, eggs, barbecue sauce, onion, garlic, smoked paprika, salt, and pepper. Mix until just combined.
- Form Meatloaf: Shape mixture into a loaf and place on prepared baking sheet.
- Top and Bake: Spread additional barbecue sauce over the top of the meatloaf. Bake for 50-60 minutes, or until cooked through and internal temperature reaches 160°F (71°C).
- Rest and Serve: Allow the meatloaf to rest for 10 minutes before slicing and serving.
Notes
For extra smoky flavor, add a dash of liquid smoke or smoked salt. Swap cheddar for pepper jack cheese to add some heat. Leftovers make great sandwiches!
