  • 6 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1 cup breadcrumbs
  • 2 large eggs
  • ½ cup barbecue sauce (plus extra for topping)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste

Instructions

  1. Preheat Oven: Preheat oven to 350°F (175°C). Line a baking dish or sheet with parchment paper or foil.
  2. Mix Ingredients: In a large bowl, combine ground beef, crumbled bacon, shredded cheddar, breadcrumbs, eggs, barbecue sauce, onion, garlic, smoked paprika, salt, and pepper. Mix until just combined.
  3. Form Meatloaf: Shape mixture into a loaf and place on prepared baking sheet.
  4. Top and Bake: Spread additional barbecue sauce over the top of the meatloaf. Bake for 50-60 minutes, or until cooked through and internal temperature reaches 160°F (71°C).
  5. Rest and Serve: Allow the meatloaf to rest for 10 minutes before slicing and serving.

Notes

For extra smoky flavor, add a dash of liquid smoke or smoked salt. Swap cheddar for pepper jack cheese to add some heat. Leftovers make great sandwiches!
