- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can black-eyed peas, drained and rinsed
- 1 cup corn kernels (fresh, canned, or thawed frozen)
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1/2 red onion, diced
- 2 medium tomatoes, diced
- 1/4 cup chopped fresh cilantro
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 tbsp lime juice
- 1 tsp sugar
- 1/2 tsp salt (or to taste)
- 1/4 tsp black pepper
- Optional: 1 jalapeño, minced for heat

- In a large bowl, combine black beans, black-eyed peas, corn, bell peppers, onion, tomatoes, and cilantro.
- In a small bowl, whisk together olive oil, red wine vinegar, lime juice, sugar, salt, and black pepper to make the dressing.
- Pour the dressing over the bean and vegetable mixture and toss to coat evenly.
- Cover and refrigerate at least 1 hour to allow flavors to meld.
- Serve chilled or at room temperature as a dip, salad, or topping.
Notes
Cowboy Caviar can be made ahead of time and stored in the refrigerator for up to 3 days. Adjust spice level with jalapeño or hot sauce as desired.
