  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can black-eyed peas, drained and rinsed
  • 1 cup corn kernels (fresh, canned, or thawed frozen)
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1/2 red onion, diced
  • 2 medium tomatoes, diced
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp lime juice
  • 1 tsp sugar
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • Optional: 1 jalapeño, minced for heat

  1. In a large bowl, combine black beans, black-eyed peas, corn, bell peppers, onion, tomatoes, and cilantro.
  2. In a small bowl, whisk together olive oil, red wine vinegar, lime juice, sugar, salt, and black pepper to make the dressing.
  3. Pour the dressing over the bean and vegetable mixture and toss to coat evenly.
  4. Cover and refrigerate at least 1 hour to allow flavors to meld.
  5. Serve chilled or at room temperature as a dip, salad, or topping.

Notes

Cowboy Caviar can be made ahead of time and stored in the refrigerator for up to 3 days. Adjust spice level with jalapeño or hot sauce as desired.
