- 1 pie crust (store-bought or homemade)
- 2 medium zucchinis, thinly sliced
- 1 cup cottage cheese
- 4 large eggs
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/2 cup milk (whole or 2%)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp dried thyme or Italian seasoning
- Salt and pepper, to taste
- Olive oil, for sautéing
Instructions
- Preheat oven: Preheat to 375°F (190°C). Place pie crust in a 9-inch pie dish and set aside.
- Sauté veggies: Heat olive oil in a skillet over medium heat. Add onion and garlic; cook until softened, about 3 minutes. Add zucchini and cook 5 minutes until tender. Remove from heat and let cool slightly.
- Prepare filling: In a large bowl, whisk eggs, cottage cheese, milk, cheddar, Parmesan, thyme, salt, and pepper until combined. Fold in the sautéed zucchini mixture.
- Assemble quiche: Pour filling into the prepared pie crust, spreading evenly.
- Bake: Bake for 35–40 minutes until the filling is set and the top is lightly golden.
- Cool & serve: Let cool for 10 minutes before slicing. Serve warm or at room temperature.
Notes
For a crustless version, grease a baking dish and bake filling directly for 30 minutes. Add fresh herbs like parsley or basil for extra flavor.
